Cellulase, xylanase, and beta-glucanase intervene in the breakdown of fibers such as cellulose or beta-glucans, found in foods such as vegetables, oats, mushrooms, or algae. Meanwhile, lactase acts on lactose, the main sugar present in dairy products.
